Our formulation approach combines traditional Jamaican food knowledge with modern food science principles, with a focus on ingredient quality, fibre composition, texture consistency, and senior-friendly preparation.


1. Functional Ingredient Composition

Dina’s Jamaican Green Banana Porridge Mix is formulated using a balanced blend of:

  • complex carbohydrates
  • plant-based ingredients

The product contains no artificial flavours, fillers, or high-fructose corn syrup.


Green Banana Flour (Core Ingredient)

Our green bananas are processed in-house within our Thunder Bay food production environment to help preserve the natural resistant starch and fibre composition of the fruit.

The formulation includes flaxseed, oats, and green banana flour — ingredients naturally rich in fibre that help support digestive wellness and regularity.

Seniors Farm Ltd. is actively collaborating with Dr. Mario M. Martinez, Associate Professor of Food Science (formerly University of Guelph / Aarhus University), to further evaluate the fibre composition and resistant starch characteristics of our green banana flour products.

Green banana flour naturally contains Type-2 Resistant Starch (RS2), a form of resistant starch that is digested more slowly than many conventional refined breakfast carbohydrates.

How to Make Dina’s Jamaican Banana Porridge

HOW TO PREPARE


1. Whisk 1 serving (38–45 g) of Diana's Jamaican Porridge into cold whole milk (250–300 mL) until smooth.


2. Heat on medium, stirring constantly, until the milk is warm.


3. Reduce to low and cook for 7–10 minutes, stirring often, until creamy and silky.


Chef’s Note: Our mix includes flaxseed, making it a great choice among healthy breakfast options, as it naturally thickens while cooking and as it sits. Keep whisking while heating. If it becomes too thick, simply add a splash of milk 

Method 2: Two Servings (Thicker Batch = Longer Cook Time)

Start cold: To make Diana's Jamaican porridge, add 2 servings (76–90 g) of mix to a pot. Pour in cold whole milk (500–600 mL) and whisk until smooth for a nutritious option among healthy breakfast options.

3. Heat on HIGH, whisking constantly until warmed through and beginning to thicken.

4. Reduce to MEDIUM-LOW / MEDIUM and cook 10–14 minutes, stirring often.

Two servings of Diana's Jamaican porridge hold more heat and thicken more, so it needs extra time to cook through evenly. If it thickens too fast, lower the heat and add a small splash of milk, whisking smooth. This dish makes for a delicious and nutritious option among healthy breakfast options. Serve hot.

Chef Note (Important)

Our mix includes flaxseed, so it naturally thickens as it cooks and as it sits. Keep whisking while heating. If it gets too thick, simply add a splash of milk and whisk until silky again.

Serving ideas: top with banana slices, strawberries, mango, a drizzle of honey, or a pinch of cinnamon.

Milk-Only Preparation (Foodservice Standard)

Per 1 serving:
38 g dry mix
250–300 mL whole milk (adjust for desired thickness)


Method (Best Results)

  1. Add cold milk to pot.
  2. Slowly whisk in dry mix while milk is still cold to prevent lumps.
  3. Place over medium heat and bring to a gentle simmer, stirring regularly.
  4. Cook 8–12 minutes until smooth, creamy, and fully thickened.
  5. Serve hot.


Chef Note

Natural ingredients may continue thickening as the porridge sits. Stir regularly during holding and add a splash of warm milk if needed to maintain desired consistency.


Cooling & Reheating Guidelines

  • Cool from 60°C → 20°C within 2 hours
  • Then to 4°C within 4 hours
  • Store refrigerated

Reheat only once to 74°C (165°F).
Add milk during reheating to restore creamy texture.
